About Hannah
Hi! I am Hannah! The Owner/Pastry Chef of Honeybear Bake Shop! Ever since I was a young girl, I have wanted to be a pastry chef. I would run home every day from elementary school to watch my favorite show Sweet Dreams with Gale Gand! I was also inspired by my mother who had her own cookie business when I was young and sold via eBay. She would stay up baking cookies with my Dad into the late hours of the night
I studied Baking and Pastry Arts at The Culinary Institute of America in Hyde Park, NY. After graduating I worked at The Inn at Little Washington. I then moved to Vail, Colorado, and worked at Sweet Basil and The Sebastian Hotel. After my time in Colorado, I moved and found my home in Charlotte, NC. I took my first Pastry Chef position at 5Church Restaurant. I oversaw the pastry program at 5Church Charlotte and Nan and Byron’s. I then helped open 5Church Charleston. After my time at the 5Church Group, I became the Pastry Chef at Big View Diner. I held that title for 3 years. I left Big View Diner to become the Pastry Chef at The Ritz-Carlton Hotel. When Covid-19 hit Charlotte in March 2020 I was furloughed from my position at the hotel.
That is when Honeybear was created, during being furloughed I started baking more from home. I wanted to fulfill my dream of opening my own bakery. I started baking cookies, lots and lots of cookies. I decided that Charlotte needed a fun cookie bakery with unique fun flavors! Here we are today! Thank you for being a loyal cookie monster!
What’s in a name?
Honeybear Bake Shop got its name from my husband Ethan! It’s super cheesy but our pet names are Sugar (Ethan) and Honey (me!). Honey then turned into Honeybear. When thinking of a name for the business we kept shooting out ideas. Ethan had mentioned the name Honeybear and it stuck and here we are today!
If you notice in the logo the “o” in Honeybear is in the shape of a cat. This comes from my love and obsessions with cats. You can say I am quite a crazy cat lady! I have two cats myself named Maxx and Emma!
